1.拉面不可缺的香味油
什么是香味油呢日本拉面有个不可缺的配角就是这个香味油常見的有豬油、雞油、麻油、牛油、奶油、豬背脂等,另外再加香味野菜去做成蔥油、蒜油等。加入香味油除了
能讓拉麵更美味之外,防止變冷是另一個重要作用。而在RAMEN DINING TABUSHI他们用的是鲣鱼香味油,用的是精心挑选高品质的食材,用慢火烤来抑制鱼腥味同时将拉出鲣鱼味的香气。
1. THE VERY IMPORTANT SEASONING OIL
Do you know what is seasoning oil? Seasoning oil is actually something very important in ramen, although it is not well sung in any of the recipe or article. Seasoning oil is usually made of pork fat, chicken fat, sesame oil, butter, cream, pork back fat. These fats and oils will be added together with wild vegetables to make onion oil, garlic oil and so on. Seasoning oil is capable of enhancing the tastefulness of ramen and prevents it to get chill.
However at RAMEN DINING TABUSHI, they insist to use bonito oil – roasted top
quality bonito fish with slow fire to maximize its aroma.
2.长时间熬出的猪骨汤底
RAMEN DINING TABUSHI为了作出美味的猪骨汤底,不惜一切的用上好的食材,精力和时间来打造这完美的汤底。用新鲜的猪骨头删除任何多余的污垢并仔细冲洗,在煮汤底的两个小时的过程中同时仔细去除残留的渣和泡沫。之后用大火高温大概煮上4个小时后放一个晚上让味道融合在一起。第二天再用大概2个小时的慢煮吧各种在汤头里的食材味道融合一体这锅汤从细节处理到汤底的完成大概需要用上12个小时。最终形成了让人难以抗拒的美味汤底。
2. THE LONG – BOILED PORK BONE SOUP
To make the perfect pork bone soup, RAMEN DINING TABUSHI is willing to do anything
for it, including using the top quality ingredients, every drop of their energy and time. The fresh pork bone is being cleaned up totally to remove all the dirt and remove all of the residual and bubble during the first two hours of boiling. After that, the bones will be boiled for another 4 hours and it will be left overnight. The next day, it will be boiled for another 2 hours with slow fire to fuse the deliciousness of all of the ingredients. Basically, making this irresistible soup require 12 hours of cooking time!

RAMEN DINING TABUSHI is only using their self made ramen. In order to make the
ramen to fuse completely with the soup, it is being made in middle thickness with moderate chewy texture.
来到RAMEN DINING TABUSHI,酱油拉面和鲣鱼拉面是你必点的人气拉面。除此之外,他们
也推出了偏辣口味的拉面,主要是为了迎合本地人的喜好精心搭配而成。在日本传统拉面馆用餐,你怎么能错过现今在日本比拉面还主流的”沾面“呢!
沾麵是什麼?
沾麵的日文名字是"つけ麺"(Tsukemen),是把拉面和湯分開的吃法。先把拉面用热水煮好,然後用冷水猛沖進行「過冷河」步驟,並用碗盛載,而熱湯就以另外一碗奉上。
拉面是将水煮熟的面放入汤里就好了,可是沾面在煮熟后必须有一个过冷水的作业。这不仅是给予面条滑顺润喉的口感,这样更可让面条更加的紧实弹牙,并将面的原味绽放出来。吃法和荞麦面差不多,都是夹起面再放于汤中沾汁来吃,因为有过冷河的步骤,加上面和汤分开,所以面条由始至终都能保持嚼劲(俗称弹牙),能避免一般拉面因为浸汤过久,吃到最后面会变软变糊的问题。在这里能更加地发挥面的美味就是汤头了,而这就意味着可以自行调整沾面的面条比例。
与拉面一样,将面全部都放入汤里面沾也是可以的,但通常放入面条的3~4成比较能享受面的原味。像这种汤头很浓郁的沾面,笔者推荐只把面条放入一半。请好好品尝面与汤的绝妙组合吧!切勿将面条留在汤中这边需要注意的一点是,切勿将面条留在汤中。因为汤是热的,可是面是冷的,所以如果面放在里面太久的话,会让汤整个冷掉使其风味下降。
配料方面和一般拉麵相同,會有叉燒、半熟蛋、蔥絲、筍條、紫菜等,然而配料放在湯那邊還是麵那邊就因不同的店而異。吃到最後店家提供名為「スープ割り」(湯割) 的東西,是淥過麵的水或清湯,注入客人剩餘的湯汁,稀釋後當作湯喝,因为加了新的汤汁的关系,原本的汤头又会变成另一种风味
This eating style is basically the same as soba eating, whereby you take the ramen and dip it with the soup. Because of the “shocking” step, the ramen is able to retain its chewy texture – because the ramen will get mushyafter it has been soaked in the soup for long time.Other than ramen, soup is the most important part as it is the source of all tastes and deliciousness. You may adjust the proportion of soup and ramen or you may just put all of the ramen into the soup. Normally, only three fourth of the ramen is being dipped with soup so you may enjoy the ramen flavor as well. For the soup with rich soup stock, it is recommended that you only dipping half of it.
*caution: never leave the ramen inside the soup as the cold noodle will lower
the soup temperature and reducing its scrumptiousness. Basically, tsukemen is having the same dishes combination as ordinary ramen, such as char shew (roasted meat with sauce), half boiled egg, spring onions, bamboo shoot, seaweed and so on. However, different ramen chef has different way of dealing with these dishes, whether to put it into the soup of ramen. When you are about to finish your ramen, they will provide you a soup named 「スープ割り」, yuwari, which is the water or clear soup that has been boiled with noodle. When it is blended with the residual soup in your bowl, it creates another kind of tastefulness.
