茗香阁:传统中的新意

当说起传统美食,你又会联想到了什么呢?咖啡?炭烧面包?三杯鸡?或者是超长的准备时间和烦琐的准备功夫?在Taman Sutera Utama,有着一家名为茗香阁的小吃店,里面尽是各种各样50,60年代的传统美食,一年365天风雨不改地为民众提供最传统,最美味的古早味美食。 

The Coffee Recipe – The Recipe of The Past
Talking about nostalgic food, what would you think of? Black coffee? Charcoal toast? Three cups chicken? Or the super duper long duration of preparation time and work? At Taman Sutera Utama, there is a shop named The Coffee Recipe, selling the food of 50’s or 60’s and it never changed across the time.


时间所见证的美味
说到古早味,很多人都会联想到非现代化的食物准备方式,而这准备方式都是很耗时和耗力的工作。也就是因为这样,越来越少人原因传承古早味美食的手艺,纷纷都走向以快捷,大量生产的食物准备方式。 

Taste from The Past
Talking about nostalgic food, many people will think of the troublesome preparation method, which is very time and energy consuming. This is why the people nowadays choose the modern way of food preparation method –which is faster and easier. 

而非常了解这一点的店主,依然坚持使用传统的食物准备方式,原因只在它能够生产出现代食物所无法取代的风味。 

Knowing about its weaknesses, the owner still insists to use traditional way of food preparation, just because it can produce the irreplaceable taste – its originality and authenticity. 



在茗香阁的主打,有两样食物– 咖啡和炭烧面包。他们的咖啡,味道就是比外头的香,非常顺喉的口感和浓郁的味道,让客人喝了都陶醉其中。店主表示,茗香阁店主家里是在麻坡生产咖啡豆,从植物成长到烘焙到粉都是由自家生产及提炼。而这么一弄,就是一个50年了。他们所生产的咖啡豆,都是上等的咖啡豆。上等的咖啡豆只需搭配上滚滚的热水,就能泡出一杯杯香气逼人,回味无穷的传统咖啡。对于咖啡,店主说他对咖啡的味道要求特别高,毕竟自己也是咖啡世家出生的,所以对所冲泡出每一杯咖啡的味道特别严厉。 

Coffee and charcoal grill toast are the most popular foods at The Coffee Recipe. Talking about coffee, their coffee is simply the best –smoother and richer aroma than any brand of the coffee in the market. According to the owner, The Coffee Recipe’s coffee is originated from Muar and self made,from nurturing, growing, baking to grinding. It never changed for the past 50 years. Their coffee beans are the top coffee bean and what you need is the hot boiling water to create a cup of fragrance coffee. The owner is very persistence about the quality and taste of their coffee, as it is the root of their family. 

配合这个日新月异,繁华的都会,店主本身也让自己的咖啡变得方便携带和饮用– 他们即将推出31的咖啡和咖啡茶包,而这个产品在茗香阁就买得到了。此外,他们也在古早味中求新。他们的代表作– 榴莲咖啡,就是一个非常好的新时代代表作。顾名思义,榴莲咖啡是由抽出来的榴莲浓缩汁和咖啡一起提炼出榴莲咖啡。味道香浓的咖啡和榴莲所搭配出来的榴莲咖啡,喝起来的时候你可以感觉得到那香气慢慢地从你的嘴巴慢慢地散开来,是种无上的享受! 

Besides, The Coffee Recipe is about to introduce 3 in 1 coffee and tea bag, which is available at The Coffee Recipe. Their innovative creation – the Durian Coffee is a very good product as it perfectly fused the aroma of the durian and coffee, creating the divinely smooth taste and irresistible aroma. You can even feel the aroma spreading from your mouth to your nose upon every sip of the coffee! 



一间咖啡店,除了香喷喷的咖啡之外,最重要的另一个主角,那就是面包啦!在茗香阁的面包,也都依然保持古早风味– 用木炭来烧烤面包。对于现代都用烤炉来烧烤的市场来讲,用木炭烧烤面包确实是琐碎,麻烦得多。但是,店主说明木炭烧出来的面包,味道比较香,从香脆的外层咬下去,里面依然能够吃到新鲜的内层。茗香阁的面包(尤其是牛油kaya面包)之所以出名,是因为面包和kaya都是自家制作,无论品质和口感都一一兼顾,也难怪人们会爱不释手。

Charcoal grill toast is another main character of The CoffeeHouse. They are still using charcoal to grill the toast, even though it is very troublesome. However, the charcoal grill toast is just crunchier and fresher than the conventional toast. The most famous charcoal grill toast at The CoffeeHouse is their Kaya Butter Toast. By the way, even their kaya is self made,too.


各式各类古早风味和现代美食
这里除了传统面包及咖啡,还可以吃得到中餐,西餐,pizza,小吃及素食。当中最有名的,就是北马出名的正宗亚参鱼。这里的招牌亚参鱼之所以那么受欢迎,是因为它的汤汁够浓郁够味道,鱼肉也特别鲜甜美味。其秘诀就在由厨师特调出来的秘方– 浓缩亚参酱。这特调的酱料,够酸够辣,也能保持鱼肉的鲜嫩度,是酱料中的极品。这么优质的酱料再加上肉质鲜嫩的新鲜红鱼,可以称得上是画龙点睛,极品中的极品! 

More Authentic and Modern Cuisines
Other than coffee and toast, you can get Chinese food,western food, pizza, snacks and vegetarian food at The Coffee Recipe.  The most famous authentic cuisine is their asam fish. Their asam fish is the original famous asam fish from Northern Malaysia. It is very popular as the sauce is being special made by their chef.The asam sauce is condensed, spicy and sour enough to preserve the freshness and smoothness of the fish. On top of that, fresh snapper is being used to prepare this cuisine, making it the perfect cuisine. 



除了亚参鱼,在茗香阁出名的,就是大多数都由自己调配的酱料,就连西餐的酱料都是由大厨一手包办。当中有特色酱料的食物有卤肉饭,蒙古鸡棒,米显和BBQ half chicken。这里的卤肉饭可是厨师在台湾拜师学来 – 层次分明的三层肉搭配上浓郁的卤汁,吃起来又香又嫩不腻口。蒙古鸡棒是一种小吃,新鲜鸡肉的肉质够软,搭配上甜中带咸的酱汁,别有一番风味。这里的米显,看似简单,但是厨师可下足了功夫。他们的米显完美地和豆芽,sambal融合在一起,味道够香够辣,让人赞不绝口。西餐方面,厨师最得意的西餐料理就是他们的BBQ half chicken。腌制了一天的鸡肉,放在烤炉里面烘烤45分钟后搽上自制BBQ酱,再烤15-20分钟即可。茗香轩的BBQ half chicken的肉质鲜嫩,不会太干,是在茗香轩必点的西餐料理之一。 

Other than asam fish, The Coffee Recipe does prepare much kind of sauces for many other foods and they are very popular, too. Their stew pork belly rice is so fragrance and not greasy at all. This dish is prepared by the chef who had learnt about this dish from Taiwan. Their Mongolian chicken stick is a very delicious snack. The sweet and salty sauce is combined with the soft, smooth fresh chicken meat, creating the flavor that you cannot resist.The mee siam is perfectly fused with bean sprout and sambal, making it so aromatic and spicy that you can’t stop eating it after the first bite. For western food, the chef is proudly present to us their famous BBQ half chicken.First, the chicken will be marinated for a day. Then, it will be toasted for 45 minutes before the chef spreads the self made BBQ sauce on it. Another 15-20 minutes in the oven is a must to create the crispy yet juicy BBQ half chicken.It is one of the must try at The Coffee Recipe. 

茗香阁的三杯鸡,是确确实实,不折不扣的传统三杯鸡。一杯麻油,一杯酱油,一杯酒,再撒上九层塔一起烹煮的鸡肉块,嫩滑的肉质中带有一丝丝米酒和麻油的香味,是传统食品中的极品!面食方面,锅仔伊面汤可以说是面食中的代表作– 它的汤头是用老母鸡熬上三个小时,味道鲜甜无比。加上各式各样新鲜的食材,这伊面汤的每一口都能让人欲罢不能! 

Besides, their three cups chicken is the real three cups chicken that you must have a try of it. A cup of sesame oil, a cup of soy sauce, a cup of rice wine and plenty of basil are going to tease your taste buds with the smooth chicken meat with the aroma of wine and sesame oil. Other than this, clay pot yee mee is considered as their masterpiece in noodles food.The soup is being made by old chicken stock, whereby the chicken is being boiled for three hours. Its taste is so sweet and it matches so well with others fresh ingredients – every bite is going to be the trigger for you to have it even more!



至于饮料方面,茗香阁的自制凤梨水就是你一定要试的饮料。他们的凤梨水都是采用上等黄梨,熬出了黄梨的甜份后再拿去煮,待冷却了过后再把它加上黄梨块就完成了。所以说,在这里喝的凤梨水所以可以喝出黄梨的原汁原味和吃出黄梨块的鲜甜。

Their pineapple juice is the drink you must try at TheCoffee Recipe. Only top quality pineapples are being boiled and chilled to make the juice. Fresh pineapple cubes are being added later on to complete the process. It is said that The Coffee Recipe is the only place you can get pure pineapple juice.



传统古早味的背后 – 店主的坚持
在茗香阁工作的厨师,已经有大约16年的掌厨经验,也难怪他所煮出来的美食样样都让人赞叹不已。此外,在这店里面所有的古早味美食,都是因为店主想要传承传统的食物才毅然地开下了茗香阁。这也就是为什么店主那么地强调传统咖啡一定要搭配炭烤面包,对于每一样食物的味道也都有所坚持。就连店的装潢店主也坚持要在传统中带有现代感,希望顾客能够在舒适,有冷气的环境下享受古早味美食。

The Reason Behind – Persistence
The chef of The Coffee Recipe is having 16 years of culinary experience, making dishes with excellent taste is just like a piece of cake for him. Other than that, the reason we have the chance to enjoy all of these authentic traditional foods is just because of the persistence of the owner, as he don’t wish to see them vanish due to modernization. (So this is why he is so persistence in his traditional coffee and charcoal grill toast, as well as other foods). Even the internal design of the shop is remained oldies styles,other than the air condition for the customers to enjoy their food in a chilled, comfortable environment.
